B27 8.3″Chef Knife

Made of 67 layers Damascus steel with 10Cr15CoMoV steel core, which is obtained by vacuum heat treatment, can reach its hardness of 60 ± 1HRC and offers a more durable cutting edge. It also offers high resistance to corrosion, rust and toughness. The unique patterns of Damascus show amazing craftsmanship and artistic personality. Thanks to a V-blade angle of 12-15 degrees, these knives have a razor blade sharp edge.

The handle is made of high quality natural rosewood, which is not easy to deform and break. It is reinforced with three rivets, one of which has been specially selected with mosaic rivets, which are unique and beautiful. Natural rosewood is a classic and practical design, ergonomic for a perfect cut, natural rosewood with original texture and natural color, makes the knives more comfortable and beautiful.

SE 240mm Sashimi Knife

SE sashimi knife series are the traditional knife shapes to cut raw fish, featuring single-bevel blades in two main shapes, Deba knife and Sashimi knife. Sashimi knives come in three sizes to adapt to different cuts:240mm sashimi knife, 270mm sashimi knife, 300mm sashimi knife.

The SE Series blades are made from Electroslag remelted 7Cr17MoV forged Steel with hardness of 58±2 HRC. Electroslag remelting is a special heat treatment which doubles the solidification speed of ingots, reducing the number and particle size of primary carbides, thereby improving the toughness of the material and enhancing the wear resistance. The concave blade grinding process, called “Urasuki” in Japanese helps reduce the contact surface between the food and the blade, prevents the food from sticking to the blade, and reduces food compression, preserving the very delicate features of raw fish. The blade surface is sandblasting and with a fine metal texture.

The handle is made in ebony wood. It is mainly produced in subtropical and African regions. It has high texture hardness and is particularly appreciated for its strong wear resistance. The wood fiber is fine, without pores and with good moisture resistance. These features and its unique aesthetic look make Ebony wood a great and beautiful material for knife handles.

B30R 8.5”Chef Knife

This series of kitchen knives is made of 73 layers Damascus steel with 14Cr14MoVNb power steel. Since the crystals of the inner elements are uniform and consistent during melting, the knives are reliably produced with their sharpness and uniform texture. Powder steel (14Cr14MoVNb) has even steel core crystals, stable heat treatment, extremely low error rate, comfortable grinding and extremely high hardness. This powder steel has a high carbon content of 1.32%-1.42% and the rare metal niobium is added to improve the rust resistance and wear resistance of the steel.

Selected rivets made of natural rosewood and mosaic brass meet. The ergonomic and non-sliding solid wood handles are very comfortable and not easy to slide, which not only reduces fatigue during long-term use but also offers a perfect balance. You can control the cut safely and comfortably.
