Carving knife

A carving knife is a type of kitchen knife that is designed to cut thin and even slices of cooked meat, such as roast, ham, turkey, or chicken. A carving knife has a long, narrow, and slightly curved blade that can glide through the meat without tearing or shredding it. A carving knife typically has a blade length of 8 to 12 inches, and a blade width of 1 to 1.5 inches. Some carving knives have a granton or hammered finishing on the blade which help prevent the meat from sticking to the knife.
